Tomato Pie Recipe, from High Country Mom Kim Soucek

My friend, and High Country Mom, Kim Soucek posted this recipe on Facebook, and I had to ask her if I could share it with you all!  We have tons of tomatoes growing in our garden, and hopefully the blight won’t attack like it did last year!

We always can Salsa and Homemade spaghetti sauce in August, but need creative things to do with our tomato bounty!  I believe this will do!

Kim’s Tomato Pietomato pie

1 x 9″ deep dish pie crust
3 large tomatoes
3/4 tsp. basil
dash of oregano, garlic, salt, pepper
4 Tbsp. chopped green onions (optional)
3/4 c. mayo
1 1/4 c. grated cheddar cheese

Bake chilled pie crust at 375 for 8-10 min. Place a layer of sliced tomatoes on bottom of pie crust. Mix mayo with spices and spread a layer on top of the tomatoes, then a layer of cheese. Follow with another layer of tomatoes, mayo mixture and cheese. Bake at 400 for about 30 min. Let settle for about 5 min. before slicing.
