Tasty Tuesday: Healthy Molasses Cookies
This is the time of year for making molasses cookies. They just seem to capture the feel of Fall in a cookie. A year ago, I shared my favorite Molasses Cookie Recipe with you. Today, I have a cookie that is a little more healthy but still delicious.
One disclaimer…if something tastes good enough to actually qualify as a cookie, it probably still isn’t a healthy choice to eat two dozen of them in one sitting! Moderation in cookie-eating, as in everything, is a very good thing…be they irredeemably decadent or fairly healthy.
- 1 c. oil (Canola oil or very light olive oil or real butter–your call; light olive oil will be healthiest)
- 1/2 c. molasses
- 1 1/2 c. brown sugar
- 2 eggs
- 2 t. vanilla
- 1 t. soda
- 1 1/2 c. white flour
- 1 c. whole wheat flour
- 3 c. rolled oats (quick oats will work, but won’t be quite as good)
- 1 1/2 t. cinnamon
- 1/2 t. allspice
- 1/2 t. cloves
- 1/2 t. nutmeg
- 1 c. raisins
- 3/4 c. chopped walnuts
Mix dough thoroughly and drop with a tablespoon onto ungreased cookie sheets (parchment is okay). Bake at 375° for 12 minutes.
These will be dark, thick, dense, chewy, cakey cookies. And remember that “healthy” is a relative term.
I intended to take a photograph of these cookies but a Terrible Fate befell them before I could take a shot. The Terrible Fate has a name, but if I told you, it would be tattling on my own son!
