Tasty Tuesday: Fettucini Alfredo
Everyone needs a couple of nice Company Meals. You know the type…the meal that impresses your mother-in-law or the meal that you make for your husband’s boss. Fettucini Alfredo is a classic Company Meal, and isn’t terribly tricky to make.
As you gather things together, you’ll need:
- 1 package of wide egg noodles, cooked and drained
- 4 – 6 chicken breasts, baked (breading optional)
The friend who shared her sauce recipe with me swears that it’s even tastier than the Alfredo sauce at Olive Garden. I don’t recall ever eating Alfredo sauce at Olive Garden, so I have no idea how it compares. My friend’s recipe, however, I can vouch for! It’s delicious.
Alfredo Sauce
- 1 pint Cream (if you want ultra-rich, go with heavy cream; if you want medium rich, use half-and-half; if you want make this dish “lighter” use milk)
- 1 stick butter
- 4 oz. cream cheese
- 3/4 c. Parmesan Cheese
- 2 T. minced garlic
- a little salt to taste depending how salty your parmesan is
In a saucepan combine butter, cream, garlic and cream cheese. Simmer this until all is melted and mixed well. Add the Parmesan cheese and simmer for 15-20 minutes on low. Add salt if you need it.

Layer the noodles on a plate, top with a chicken breast and generous amounts of sauce. A green salad goes nicely with this meal, as does French bread.

This sauce keeps and freezes very well. It serves 4-5 people and can be doubled for a larger crowd.

WOW, Barb! I always thought Alfredo was really difficult, but this looks great! Thanks for sharing, and it’s one of my favorite sauces ever!
