Here's a recipe from my friend Lessa:

GF Peanut Butter Cookies

1 cup peanut butter; organic is fabulous
1 cup firmly packed brown sugar
1 large egg
1 teaspoon baking soda
½ c. chocolate chips; optional, of course

In a small bowl mix together all the ingredients, except chocolate chips, with a wooden spoon. Then when it’s mixed well, add the chocolate chips.
Drop dough by teaspoonfuls (or tablespoonfuls;) on an ungreased cookie sheet. Don’t flatten them.

Bake at 350 for about 9 minutes or until puffed and golden. The cookies will be very soft, cool on the cookie sheet for 5 minutes; then take cookies from sheets to cool completely.

Since this was my idea, here's a great Peanut Butter Cookie recipe:

1 cup of peanut butter (or any other kind of nut butter for that matter)
1 cup of sugar
1 egg

Mix. Place on cookie sheet in rounded spoonsful and bake at 350 for 9 minutes for soft cookies, 11 minutes for firmer cookies.

Add an extra egg white and 1/2 cup of GFCF chocolate chips for another variation. With this variation, refrigerate for at least 15 minutes before spooning out and baking. Bake for 11 minutes for soft cookies and 15 for firm cookies.

These cookies are so good my whole family begs me to bake them.
