Freebie Friday: Chick-Fil-A Dinner for Four with “Moo Cow”

I’m so excited about this week’s Freebie Friday! Chick -Fil-A is offering a Dinner for Four with an appearance by “Moo Cow,” the mascot! (If your kids happen to be scared of the Moo Cow, like mine used to be, you can just enjoy the dinner!)
Here are a few of the upcoming events for families, and kids at Chick-Fil-A:
Tuesday, July 8 from 5:30 – 7:30, Family Night!
5:30 Making Cow Costumes for kids
7:00 Story Time with Bing! (”Click Clack Moo”)
Friday, July 11, all day, Cow Appreciation Day!
~ Wear your cow costume, and get free food!
~ Combo meal for a full costume (mask, and something that looks remotely like a cow’s body)
~ Entrée for partial cow attire (just mask or shirt)

Wednesday Fun!

We have had a fun Wednesday routine for a while now, and I thought I’d share it with you, so you can join in.
Last Wednesday, we actually added a new leg to our Wednesday rounds, when we went to the Watauga County Farmers’ Market. They are open Wednesday mornings through Sept. 10, and you have to get there early for the produce! The Kids’ Craft Table is of particular interest to moms. Melissa Jaroszewski is a High Country Mom and art teacher, who teaches Summer Art Classes for kids at the Western Watauga Library. She is a NC and TN certified art teacher, and loves working with kids, so she’s sharing her craft at the Market. Next, we go to Bald Guy Brew at 10:30 to hang out with the High Country Mommies. The kids have a great time playing in the little playroom there, complete with toys they’ve never seen before. (Those toys are always better than the one at home!) Don and Samir serve up the brew with their signature personalities, and welcome us and our kids! Do you know another coffee shop where your kids can play around without getting some interesting looks? Don’t like coffee? Bald Guy has wonderful Hot Chocolate, and Smoothies, as well as refreshing iced coffee and Frappes.
Then, we usually go to Blimpie for lunch, where Rick and the gang make quesadillas for the kids. The adults, (and even the kids) can get , wraps, salads and $5 footlongs. Blimpie has a deck outside, so you can enjoy the great weather we’ve been having.
I know what you’re thinking… “She’s just saying those things because they are all Mom Squad Sponsors.” But I am not joking, I DO these things almost every Wednesday! Ask any of my friends, because I’m always trying to get them to come with me!
And why are they sponsors? Because I was doing these thing before I even started the Mom Squad! I told them I’d never come back if they didn’t join me, and they couldn’t bear not to see my smiling face every week. Just kidding - but they are sponsors because they are wonderful places to take the kids. So come on! Get dressed and get the kids out the door! You can eat breakfast at the Market!

Tasty Tuesday: Tomatoes and Fresh Mozzarella

Tomatoes, lovely tomatoes. I could rhapsodize for hours on the joys of perfectly ripe tomatoes. THESE are the tomatoes that I dream of all winter when the only tomatoes I can buy are pale, juiceless shadows of the real thing.
I have one son who will eat tomatoes like he’ll eat an apple. In fact, he’d eat several tomatoes each day if I let him. We’ve been enjoying wonderful, HUGE locally grown tomatoes for the last couple of weeks. I realize that tomatoes have been hard to find in the stores in some parts of the country lately–this nearly convinces me that I need to grow my own!
When the weather is warm, I’m always looking for no-cook options and I think this is our no-cook hit of the season. It couldn’t be simpler to make.

Sliced Tomatoes and Fresh Mozzarella
- Four large ripe tomatoes, sliced into rounds
- 1 pound fresh mozzarella, sliced into rounds the same thickness as the tomatoes
- balsamic vinegar or your favorite vinegar-y salad dressing*
- fresh parsley, cilantro, or basil, finely chopped
- 1/2 c. very finely shaved red onion (optional)
Stack a slice of mozzarella on top of a slice of tomato. Drizzle with balsamic vinegar or your favorite dressing. Sprinkle with chopped herbs and onion.
Note: the best place to buy fresh mozzarella is Sams Club. You just can’t beat the price and it’s a nice quality.
*Last night I used some leftover homemade vinegraitte constructed out of 1/4 c. olive oil, 1/4 c. balsamic vinegar, 2 T. pesto, 1 t. lemon juice. Plain balsamic vinegar works just fine too.
